Berry Breakfast Bombs – Balance Low Blood Sugar

Low blood sugar? These balanced breakfast muffins are a sure-fire way to kick start your day and your metabolism.

Ingredients:

1 cup rolled oats
1 cup spelt flour (you may use ½ cup all purpose flour and ½ cup whole wheat flour)
¼ cup flax meal
¼ cup coconut palm sugar
1 tsp baking soda
1 ½ tsp baking powder
1 egg
¼ cup coconut oil melted (you may use butter)
3-4 ripe bananas
1 cup frozen blueberries or mixed berries
1 handful chopped walnuts

Directions:

  1. Preheat oven to 375 degrees. Oil the muffin tins.
  2. Mash the bananas and add the egg.
  3. Blend together the dry ingredients and add in the moist ingredients. Mix together thoroughly and fold in the berries and walnuts.
  4. Spoon into muffin tins and place in oven for 20 minutes or until toothpick comes out clean.

Makes about one dozen muffins, or fewer if you prefer larger muffins.
