Low blood sugar? These balanced breakfast muffins are a sure-fire way to kick start your day and your metabolism.
1 cup rolled oats
1 cup spelt flour (you may use ½ cup all purpose flour and ½ cup whole wheat flour)
¼ cup flax meal
¼ cup coconut palm sugar
1 tsp baking soda
1 ½ tsp baking powder
¼ cup coconut oil melted (you may use butter)
3-4 ripe bananas
1 cup frozen blueberries or mixed berries
1 handful chopped walnuts
- Preheat oven to 375 degrees. Oil the muffin tins.
- Mash the bananas and add the egg.
- Blend together the dry ingredients and add in the moist ingredients. Mix together thoroughly and fold in the berries and walnuts.
- Spoon into muffin tins and place in oven for 20 minutes or until toothpick comes out clean.
Makes about one dozen muffins, or fewer if you prefer larger muffins.
